Grilled Wine Cap Steaks with Chimichurri
VeganThick Wine Cap caps cut into 'steaks', marinated briefly, grilled over high heat until charred at the gills, then drowned in a vivid Argentinian chimichurri. Vegan steakhouse main course.
-
1
Whisk the marinade ingredients (3 Tbsp olive oil through 1/2 tsp salt) in a shallow dish. Lay the Wine Cap mushrooms in, turning to coat. Let sit 15 minutes.
-
2
Make chimichurri: finely chop parsley, oregano, garlic, chili by hand or pulse in food processor 4-5 times — keep texture. Stir into the vinegar + olive oil + salt + pepper in a bowl. Let rest 10 minutes.
-
3
Heat a grill (or grill pan) to medium-high. Brush grates clean and lightly oil.
-
4
Lay Wine Caps gill-side up. Grill 4 minutes until pronounced grill marks.
-
5
Flip. Grill 4 more minutes — caps wilt and brown deeply.
-
6
Move to a board. Slice thickly. Plate and spoon chimichurri generously over the warm slices.
-
7
Serve with grilled bread to mop up the green sauce + extra chimichurri at the table.
