Cream of Snow Oyster Soup with Crispy Shallots

Vegan swaps inside

Snow Oysters are the diplomats of the oyster family. Pure white, mild, perfect for cream sauces and soups where you want the mushroom to whisper, not shout. Topped with crispy shallots for crunch.

Cream of Snow Oyster Soup with Crispy Shallots

    Steps

  1. 1

Slice 2 shallots into thin rings. Pat dry on paper towels.

  2. 2

Heat 1 cup neutral oil in a small saucepan to 325°F. Fry the shallot rings 4-5 minutes until deeply golden. Drain on paper towels, salt lightly. Set aside.

  3. 3

Tear half the Snow Oysters into bite-size pieces; reserve. Roughly chop the other half — these will simmer down into the broth.

  4. 4

Melt the butter in a heavy pot over medium heat. Add the diced shallots and cook 4 minutes until soft.

  5. 5

Add garlic and thyme; cook 1 minute. Add the chopped half of the mushrooms; cook 5-7 minutes until they release their water and it cooks back off.

  6. 6

Pour in sherry, scrape the bottom, and reduce by half — about 2 minutes.

  7. 7

Add broth. Simmer 15 minutes uncovered to let flavors marry.

  8. 8

Stir in heavy cream. Remove thyme stems.

  9. 9

Use an immersion blender to puree the soup until smooth. Taste, adjust salt and white pepper.

  10. 10

In a clean skillet, sear the reserved torn Snow Oysters with a touch of butter over high heat, 3-4 minutes, for a second texture in the bowl.

  11. 11

Ladle soup into bowls. Top with seared mushrooms, a pile of crispy shallots, chives, and (if using) a drop of truffle oil.
