Hot Nameko Soba in Mushroom-Dashi Broth
Vegan swaps insideBuckwheat soba noodles in a clear, deeply-savory broth thick with Nameko caps. The mushrooms' silky coating slightly thickens the broth around each strand. Quintessential 15-minute Japanese weeknight dinner.
-
1
Bring a large pot of water to a boil for the soba.
-
2
Meanwhile, in a separate pot, combine dashi, soy sauce, mirin, sugar. Bring to a gentle simmer.
-
3
Add the Nameko mushrooms to the broth. Simmer 3 minutes — broth picks up their silky body.
-
4
Cook the soba in the boiling water according to package (usually 4-5 min). Drain. RINSE briefly under cold water to stop cooking + remove starch.
-
5
Divide cooked soba between two warm bowls.
-
6
Ladle the hot Nameko broth over the noodles, distributing the mushrooms evenly.
-
7
Top each bowl with scallions, a tiny mound of grated ginger, a few drops sesame oil if using.
-
8
Serve immediately, with shichimi togarashi on the side for stir-in heat.

Nameko Miso Soup with Silken Tofu
The Japanese standard. Tiny amber Nameko caps hold their silky, slightly gelatinous body when simmered in dashi — combined with silken tofu and white miso, this is breakfast in Tokyo and dinner in winter.
Nameko Nabe (Donabe Hot Pot)
A bubbling tabletop hot pot built around Nameko's slippery-silky texture, with napa cabbage, tofu, and dashi-mirin broth. Cook-at-the-table dinner-for-two; everything goes in one pot and gets ladled out hot.
