Maitake "Fried Chicken" Sandwich
Vegan swaps insideMaitake's branched ruffles hold buttermilk-marinade and crisp into something that genuinely echoes fried chicken — same shatter, same juiciness. Hot-honey drizzle + pickles on a soft potato bun.
-
1
Submerge the whole Maitake clusters in buttermilk + hot sauce in a shallow dish. Marinate 20 minutes (or up to 2 hours refrigerated).
-
2
Whisk flour, cornstarch, paprika, garlic powder, cayenne, salt, pepper in a wide plate.
-
3
Heat 1.5 inches of oil to 350°F in a heavy skillet.
-
4
Lift a Maitake from the buttermilk, letting it drip just briefly. Press it firmly into the flour mixture on both sides — you want a thick, craggy coat in every ruffle.
-
5
Slide into the oil. Fry 4 minutes per side, turning carefully, until deeply golden and crisp. Drain on a wire rack.
-
6
Season immediately with a pinch of kosher salt.
-
7
Stir the hot honey ingredients together in a small bowl.
-
8
Toast the buns. Spread mayo on the bottom, lay pickles, top with the fried Maitake, drizzle hot honey. Crown with the top bun. Press lightly. Devour.

Other ways to cook Maitake
Roasted Maitake Clusters with Brown Butter & Sage
Maitake crisps like no other mushroom. Tear into large clusters, roast at 425°F, finish with brown butter and crispy sage. The edges shatter; the centers stay rich. This is the dinner-party play.
Maitake Risotto with Lemon-Thyme
Slow-stirred arborio finished with roasted Maitake clusters on top — the contrast between creamy rice and crispy edges of the mushroom is the whole dish. Brightened with lemon zest and fresh thyme at the end.
