Lion's Mane Pan-Seared "Scallops" with Lemon-Caper Butter
Vegan swaps insideThe dish that wins skeptics. Slice into rounds, salt to draw moisture, sear hot in butter. The texture comes out remarkably scallop-like, with the same sweetness. Restaurant move at home.
-
1
Tear or slice the Lion's Mane into 1-inch-thick rounds. Lay them on a paper-towel-lined plate, sprinkle with the kosher salt, and let sit 10 minutes to draw out moisture.
-
2
Press the rounds gently between two paper towels to dry. They should feel firm and only slightly tacky — not wet.
-
3
Heat 2 Tbsp butter and the olive oil in a heavy skillet (cast iron is ideal) over medium-high heat until the butter foam subsides.
-
4
Add the Lion's Mane rounds in a single uncrowded layer. Sear undisturbed for 3-4 minutes until deeply golden.
-
5
Flip, sear 3 more minutes on the second side. Move to a warm plate, season with flaky salt and pepper.
-
6
Drop the heat to medium, add the remaining 1 Tbsp butter and the sliced garlic. Cook 30 seconds until fragrant.
-
7
Pour in the white wine and scrape up the browned bits. Reduce by half, about 1 minute.
-
8
Off heat, stir in capers, lemon juice, and parsley. Pour the pan sauce over the seared Lion's Mane.
-
9
Serve immediately with crusty bread to mop the sauce.

Other ways to cook Lion's Mane
Lion's Mane "Crab" Cakes with Old Bay Aioli
Shred and pan-press into golden patties. The fibrous strands flake exactly like crab meat — same fork-pull, same sweetness. Bound with breadcrumb + egg, fried crisp, served with a zippy Old Bay aioli.
Lion's Mane "Lobster" Roll
Cubed Lion's Mane tossed in butter + lemon and piled into a buttered split-top bun. Tastes shockingly close to the real thing — sweet, briny (via celery + Old Bay), and rich without being heavy.
