Quick Cordyceps Stir-Fry with Bok Choy
Vegan swaps insideAmerican Cordyceps are mild, slightly sweet, and bright orange. They can actually be cooked, unlike their medicinal cousins. The flavor is delicate. Stir-fry hot and fast with greens and oyster sauce.
-
1
Trim any tough ends off the Cordyceps. Leave them whole — they're bite-size already.
-
2
Wash and halve the bok choy. Pat thoroughly dry — wet greens steam instead of sear.
-
3
Heat a wok or wide skillet over high heat until smoking. Add 1 Tbsp oil.
-
4
Add the bok choy cut-side down. Sear 90 seconds without moving until charred. Toss 30 seconds. Transfer to a plate.
-
5
Add remaining 1 Tbsp oil. Add garlic, ginger, and scallion whites. Stir-fry 20 seconds until fragrant.
-
6
Add the Cordyceps. Stir-fry 90 seconds — they shouldn't lose their bright orange.
-
7
Return the bok choy. Add oyster sauce, soy sauce, and Shaoxing. Toss 30 seconds to coat.
-
8
Off heat, drizzle sesame oil.
-
9
Plate over jasmine rice. Top with scallion greens and sesame seeds.
