Cordyceps Brown Rice with Sesame & Scallion
VeganThe simplest way to eat Cordyceps daily. Cooked into brown rice with a splash of sesame oil and scallions at the end — a clean savory base for any protein you want to layer on top.
-
1
Combine the brown rice, water, dried Cordyceps, and salt in a heavy pot with a tight lid.
-
2
Bring to a boil over high. Reduce to the lowest possible simmer, cover, cook 40 minutes WITHOUT lifting the lid.
-
3
Off heat, let it steam covered for 10 more minutes — this is non-negotiable for fluffy rice.
-
4
Fluff with a fork. The Cordyceps will have swelled and infused throughout.
-
5
Drizzle with sesame oil and soy sauce. Toss gently.
-
6
Plate, shower with scallions + sesame seeds.
-
7
Use as a base for fried egg + greens, grilled meat, or steamed fish.

Other ways to cook American Cordyceps
Quick Cordyceps Stir-Fry with Bok Choy
American Cordyceps are mild, slightly sweet, and bright orange. They can actually be cooked, unlike their medicinal cousins. The flavor is delicate. Stir-fry hot and fast with greens and oyster sauce.
Cordyceps Chicken Tonic Soup
The Chinese tonic tradition done weeknight-fast. Whole chicken legs slow-simmered with dried Cordyceps, ginger, and goji berries — yields a clear, restorative golden broth and tender chicken to shred over rice.
