Garlic-Butter Blue Oysters on Toast
Vegan swaps insideThe 15-minute showstopper. Blue Oysters are the workhorse. They hold their shape through high heat, take on bold flavors, and crown a piece of toast like they own it. Brunch, lunch, late-night.
-
1
Tear the Blue Oysters into bite-size clusters along their natural seams. Don't slice — torn edges crisp better.
-
2
Heat the butter in a large skillet over medium-high heat until foam subsides and it smells nutty.
-
3
Add the mushrooms in a single layer. Resist the urge to stir for the first 3 minutes — let them brown.
-
4
Add minced garlic and thyme leaves. Toss for 1 minute until fragrant.
-
5
Pour in the soy sauce and lemon zest. Cook 1 minute more, tossing to coat. The pan should be glossy, not soupy.
-
6
Toast the bread until deeply golden.
-
7
Rub the cut side of the halved garlic clove over each slice while still warm.
-
8
Pile the mushrooms onto the toast. Finish with parsley, flaky salt, and a generous crack of black pepper.
-
9
Eat immediately. The toast is the plate.
