Nutritional Benefits
What's inside Lion's Mane
Low in calories (about 25 kcal per 100g) yet rich in plant protein and dietary fiber. A standout source of polysaccharides — particularly beta-glucans — plus B vitamins (B1, B2, B3, folate), potassium, zinc, and selenium. Like most fungi, Lion's Mane contains ergosterol that converts to vitamin D when exposed to sunlight before harvest. Also a meaningful source of ergothioneine, the rare antioxidant amino acid sometimes called the "longevity vitamin."
Health & Wellness
How it shows up in research and tradition
Lion's Mane has long been valued in traditional East Asian wellness practices. Its unique compounds — hericenones and erinacines — are the focus of ongoing research into nerve growth factor (NGF) production and cognitive function. Studies have explored its potential role in supporting memory, focus, and mood. Lion's Mane is one of the few culinary mushrooms that crosses freely into both kitchen and apothecary; the kitchen version is what we grow here.

Cooking & Recipes
How to cook Lion's Mane
Lion's Mane is the mushroom that mimics seafood. Tear the cascading fruiting bodies into bite-size clusters, salt them lightly to draw out moisture, then sear hard in butter — the texture comes out remarkably close to a sea scallop or lump crab, with a delicate sweetness that pairs with citrus, brown butter, capers, herbs, and white wine. It also crisps beautifully when shredded and pan-fried. Avoid stewing or overcrowding the pan; it wants high heat and dry surface contact.
About the cause this mushroom supports
LMJ's Lost Souls - Alzheimer's Fund
We will fight to END Alzheimer's.
Lost Souls was born in 2009 as a Team to support the Walk To End Alzheimer’s and the Alzheimer’s Association. President of LMJ’s Lost Souls, Kari-Ann Ryan’s Grandmother, Laverne had been dealing with this disease for many years at this point. There was no cure and no way for Kari-Ann to help her so she decided to start a walk team. This was in an effort to take back some control that she felt was lost in dealing with her grandmothers’ disease. Her grandmother passed in 2016 after a 13 plus year battle with the disease.
In 2015, Vice President of LMJ’s Lost Souls, Matt Harrold joined the team and quickly got very involved. His mom had been diagnosed with early onset Alzheimer’s. Matt’s mom, Mary Jo was afflicted with this disease young and it escalated fast. She was taken from his family way too early at the age of 64. He runs an amazing Golf outing in her name since 2016 bringing on average 30K a year for the cause.
Laverne and Mary Jo make up the core purpose of our cause LMJ.
Secretary of LMJ’s Lost Souls, Lori Urbaniec had chosen much of her career to focus on fundraising within local business communities via her position within a chamber of commerce. As her network grew, she met Kari-Ann who introduced her to Lost Souls fundraising and then later she met Matt, who also had a loved one in the fight against Alzheimer’s. At the time, this disease was one she had not much experience with, but soon, as many of us have experienced, it hit closer to home. Losing her husband’s uncle, best friends family members and most recently, her mother-in-law currently in memory care, it was time for her to make a much bigger difference.
As a strong supporter of both Kari-Ann & Matt in all their efforts and events. She brings to the table a personal connection and a passion to give back to this cause.
Every pound of Lion's Mane sold sends $2.00 to LMJ's Lost Souls - Alzheimer's Fund. See the public Impact ledger for the running total.
